Black Bean Hummus Quesadillas
This has become an instant favorite in our household. The recipe is super easy, quick, and delicious! Great for picnics, lunches, or showing off at a potluck or vegan event.

- 1/4 can of black beans
- 1 tortilla
- 2 tbsp hummus
- 1/2 avocado
- Jalapenos
- 1 tbsp Coconut oil
Cooking
- Warm coconut oil in a pan large enough to fit a tortilla in it at medium heat.
- Lay down a tortilla in the pan making sure that the oil coats the entire bottom of the tortilla.
- Add the hummus and spread with a spatula, covering the top of the tortilla. Leave one inch from the edge of the tortilla hummus free.
- In a microwave or other pot, warm the black beans after draining. Make sure you drain them well or you will have soggy quesadillas.
- Cut your avocado into slices, add them onto half of the tortilla.
- Add black beans and jalapenos to the same half.
- Watch the bottom of your tortilla. You want it to get nice and toasty but not burnt. Times will vary depending on your burner. Aim for lightly browned.
- Flip the side that only has hummus on it over the other half making a half moon shape.
- Let brown for a minute and flip. Let the other side brown for a minute.
- Place on cutting board and cut into thirds.
- I strongly advise starting another tortilla because after you eat one of these, you will want many more!
