Instant Pot 13 Bean Soup
I first made this recipe with Bob's Red Mill 13 Bean soup mix, but I have since made it with various bean combinations. The flavor is subtly different each time, but always good. I made this recipe for the 6 qt Instant Pot. Make sure that you do not exceed the maximum amount recommended for your pot size. The recipe can be halved or doubled if you need to (or any fraction that you want to calculate), but keep the cooking time the same.

- 1 large or 1/2 medium yellow onion, diced
- 5 cloves garlic, minced
- 2 cups dry, rinsed Bob’s Red Mill 13 bean mix
- 2 carrots, chopped
- 3 stalks celery, chopped
- 1 bay leaf
- 1 tbsp veggie bouillon (we use Better Than Bouillon "No Chicken")
- 6 cups water
Cooking
- Add all ingredients to IP.
- Cook on high pressure for 30 minutes with natural release.
