Pancakes
These are quick and delicious just as they are, but if you want to dress them up a little go ahead and add sliced bananas, blueberries, chocolate chips, or whatever you want into the batter.

- 1 1/4 cups flour
- 1 tbsp baking powder
- 1 tbsp sugar
- 1/4 tsp salt
- 1 cup almond/cashew/rice/whatever milk
- 2 tbsp liquid coconut oil
- 2 tbsp water - check your consistency, sometimes I need this and sometimes I don't
Cooking
- Mix dry ingredients together first, then add coconut oil and milk.
- You're going for normal pancake batter consistency, so add the water only if you need it.
- Over medium heat, fry these in more coconut oil. You really only need enough to coat your pan, but I like to make a little puddle so the edges of the pancakes get crispy and extra coconut-y. They're ready to flip when the top starts making little bubbles and the edges look dry.
