Hashbrown Burritos
I buy already cut hashbrowns from Costco. They work great but I am sure other store bought brands would work just as well.
Ingredients
Cooking
Side Note: You can add in refried beans, black beans, corn, and cilantro if you want. Really tasty!
Other Side Note: Cut up jalapenos (4-5) and throw them on top. Amazing.
- 2 Golden Grills Hashbrown cartons
- 1/2 red onion
- 4 garlic cloves
- 7-8 small sweet peppers or 2 large sweet peppers
- 1 Chipotle Field Roast Veggie link
- 2 tbsp flour
- 1 tbsp black pepper
- 1 tbsp chili pepper
- 1 tsp cayenne pepper
- Tortillas
Cooking
- Prepare the potatoes - for Golden Grills, you have to add in some hot water to the carton.
- Heat up some olive oil in a pan - medium heat
- Finely dice the onion and sautee until they turn white. Add minced garlic and continue cooking for a few minutes or until the garlic turns golden.
- Cut the peppers into small pieces as well as the veggie link and add to the pan.
- Sautee for a few minutes before adding in the hashbrowns.
- Add in the flour and all spices. Mix well.
- Make sure you throw a tortilla or two in the oven so they are warm for when you are ready to eat.
- Continue mixing at medium high heat until the hashbrowns begin to brown slightly.
- Take your tortilla out of the oven, add the hashbrowns and pour on the salsa or hot sauce.
