Black Bean Veggie Burger
We are still searching for the perfect veggie patty that gives the same qualities as a perfectly cooked veggie burger you would find at a high-end restaurant. On our search, we found a black bean explosion of flavor. Caution: this is a black bean patty. If you are craving a veggie burger, this will not satisfy. It has its own unique taste which is bomb, but the texture is not like a veggie burger. That being said, it is incredibly healthy and tasty. Easy to make and if you have extra veggies lying around, THROW THEM IN THE MIX!

- 1 (16 ounce) can black beans, drained and rinsed
- 1/2 green bell pepper, diced
- 1/2 red onion, diced
- 3 cloves garlic, minced
- Chia seed mix/egg replacement (see instructions below)
- 1/2 cup bread crumbs
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tbsp hot sauce or red pepper flakes
- Jalapenos if you like it hot :)

- Preheat oven to 375 and lightly oil one large pan.
- While the oven is heating, we are going to start our chia seed mix.
- In a small bowl, add 1 tbsp of chia seed and 3 tbsp of water.
- Mix and let sit. We will come back to it.
- In a large bowl, pour out the black beans and mash them with a fork until they are thick and pasty.
- Next dice/mince your green pepper, onion, and garlic.
- Add them to the large bowl and mix.
- Next comes your egg substitute. It should have a jelly-like consistency at this point. Add all of it to the large bowl.
- Add your spices and stir.
- We like to make our own bread crumbs. Just put a piece of bread in a blender and pulse until the big chunks are gone. Add 1/2 a cup and mix.
- At this point, the large bowl should have a mix that is kind of sticky and holds together. If not, add more bread crumbs until you get the texture perfect for forming your patties.
- Divide the mix into 4 patties and arrange on the oiled baking sheet making sure to leave some space between them.
- Bake for ten minutes, flip, bake another ten minutes and enjoy.
