Power Morning Oatmeal
Kim and I recently checked out the book, "The Blue Zones: Lessons for Living Longer From the People Who've Lived the Longest," and have been trying to incorporate lessons learned from some of the oldest living people on Earth. I have never been a big breakfast eater and have experimented with intermittent fasting but the data was clear in Blue Zones that breakfast should be one of your biggest meals if not the biggest meal in your day. So this is our attempt at eating a bigger breakfast to keep the hunger at bay all day! Or at least a few hours..

If you are a peanut butter fan and get bored of normal oatmeal, give 1/3 a cup of peanut butter a try! All you need to do is add in the scoop of peanut butter when your oatmeal is the right consistency. Stir for 30 seconds and serve!
- 3 C water
- 1.5 C oats
- 1 large banana or 3 small Hawai'i apple bananas, sliced
- 1/3 C raisins
- 1/2 tsp cinnamon
- 1-2 dates (chopped)
- 1 apple (chopped)
- 1/4 cup pecans (chopped)
- 1/3 cup peanut butter
- 1/4 cup blueberries (if frozen, this is a good way to cool down your oatmeal for immediate enjoyment)
- 1/4 cup non-dairy milk (also brings down temperature and makes it creamier)
Cooking:
- Bring 3 cups of water to a simmer in a small pot
- Measure and add oats, raisins, and cinnamon to a small bowl (I use the same bowl I'll eat out of)
- Slice your banana (or apple and dates)
- Once the water has started to simmer, add in the oats, raisins, and cinnamon and stir
- Add banana (or apple and dates) and stir
- Lower the temperature to medium heat (3/5 on our electric burner) and continue to stir every minute or so. It will begin to thicken
- Serve the oatmeal once it is the consistency you like (we like it when it sticks to the spoon or ladle)
- Top with another sprinkle of cinnamon and any other optional toppings
