Easy Cheesy Cashew Sauce

Things to Consider:
- 2 cups raw cashews
- 3/4 cup water
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- 1/4-1/2 teaspoon salt
- 1/8 teaspoon garlic powder
- Pepper to taste
Instructions
- Soak the cashews over night in water OR boil water and soak the cashews for one hour.
- Add all the ingredients to your blender.
- Blend until creamy and serve.
Things to Consider:
- Kim and I have found that people have a huge range when it comes to how much salt they like in a dish. Start small, blend, and add more if desired. If this sauce does not seem "cheesy" enough for you, adding an additional pinch of salt or two usually does the trick.
- We use a Vitamix blender but have made this sauce with other brands of blenders. The key is to make sure you blend long enough (normally 1 minute on high with a Vitamix, other blenders may require more blending time.)
- If you would like some spice, add in a pinch of cayenne pepper or a few drops from a favorite hot sauce!
