Tofu Marinade

Ingredients
Cooking
- 1 block extra firm tofu
- 1/4 cup soy sauce or tamari
- 1/4 cup rice vinegar
- 2 tbsp lime juice
- 2 tbsp brown sugar
- 1 tbsp minced fresh ginger
- 2 tsp toasted sesame oil
- 2 tsp Sriracha or similar hot sauce
- 2 cloves garlic, thickly sliced
Cooking
- Drain the extra firm tofu, and press the water out. This can be done in about an hour by wrapping it in a clean dish cloth, and putting it in between two plates, adding weight on top with a can of beans or something.
- Mix all the marinade ingredients together in a shallow dish.
- Cut the tofu into planks about 1/4 inch thick, yielding about 12. Arrange them in a single layer in the marinade. Marinate 2-8 hours.
- Heat oven to 450 degrees, and arrange the tofu planks on a baking sheet.. Bake 15 minutes, flip, spoon more marinade on top, bake ten more minutes, flip, more marinade, and bake 5 more minutes. Edges should turn brown.
- Let it cool and then cut into whatever size you need. Use in the garlic ginger stir fry or spring rolls.
