Corn and Potato Chowder
This chowder recipe is extremely easy and turns out amazing. Perfect for when your loved ones get a cold or the evening air has a chill and you need a little something to warm you up. Let's get started!

- 2-3 Tbsp Olive Oil
- 1/2 a large yellow onion
- 2 cloves garlic
- 2 russet potatoes
- S&P
- 2 cans of corn
- 2 cups veggie broth
- 2 cup coconut/almond/cashew/rice/whatever milk
- Green onion to garnish
- 1 Tbsp Mediterranean Herb blend
Cooking
- Add the oil to a large pot and bring your burner to medium heat while you chop the onion. I like my soups to have a range of onion sizes so be creative with your chopping. It doesn't have to be finely diced. Aim for the size of a penny or smaller.
- Saute onion for 3-4 minutes and begin mincing the garlic.
- Add garlic and saute additional few minutes while cutting potatoes.
- Cut potatoes into small cubes the size of dice, then add them and the salt and pepper. Mix, then cover with the lid. Steam those potatoes for around 5 minutes.
- Drain the corn and add it to the pot. Make sure to give it a quick stir so your potatoes don't burn.
- Add your veggie broth and choice of vegan milk. I like to go with coconut to give it a rich creamy flavor, but choose whatever makes you happy.
- Once you have added everything, cover again and bring to a low boil. Reduce heat to low, and cook until those potatoes are nice and soft. Roughly 5 minutes.
- Now comes decision time. To blend, or not to blend. Kim and I own an easy to use Cuisinart Smart Stick blender. It works wonders, and if you make a lot of soup it might be a good purchase, but you do not have to blend! Personal choice.
- After you have blended, or not blended, try a bit. You will probably want to add a little seasoning. We use a Mediterranean blend which is mostly oregano, rosemary, red bell peppers, thyme, and lavender. If you like it hot, use red pepper flakes or a little cayenne. This is your chowder, so you can make it your way.
- Let simmer for 10 minutes. If you did not blend, wait a little longer to let it thicken.
- Garnish with green onion and enjoy :)
